Since 2018, Los Charros Cantina has been studying and recreating authentic Mexican cuisine with an emphasis on history, research, and quality with a modern interpretation rooted in sourcing the highest quality products in our scratch cooking environment. The tortillas are made daily in house along with the salsa. The beans come in dry in a bag. The proteins are sourced with intent. The love is in the food.

Chef/Owner Colt Taylor of THE ESSEX RESTAURANT created Los Charros cantinas as an homage to the amazing flavors, techniques and ingredients of the diverse country his uncle comes from. With respect to the southern regions, we explore flavors and techniques that are not all too familiar to New England, so come experience what were all about!
